Fermented in Steel vats at 14┬║C for 21 days. The wine was then racked to remove the heaviest sediment and is then matured for 11 months in stainless Steel vats sur lie (with the lighter sediment left in) with a weekly b├ótonnage (stirring).
- Yellow with greenish tones
- Medium intensity with white flowers, aromatic herbs, bay, fennel, spice (white pepper), basil, citrus fruits (lemon peel), (grapefruit), loquat and apricot, and a mineral and dry stone background.
- Fresh with a very sligth, fine fizz with full body, an elegant oily texture and slight astringent finish.
